Whole Norway Salmon Sashimi 6-7KG Whole Norway Salmon Sashimi 14-15 pounds. The sashimi portion of the whole salmon is about 8-10 pounds. (The actual weight depends on the weight of the fish.) The fresh fish head, fish bones, fish belly, fins, and fish tail are all put into a box and given to you. The gills will also be provided for you. Cut it off first.
