Ingredients:
- 1.5 pounds live razor clams (rinsed thoroughly)
- 5 tablespoons extra virgin olive oil
- 4 cloves garlic (chopped)
- 3 pieces dried chili pepper
- 1.5 cups white wine
- 1.5 cups loosely packed flat-leaf parsley leaves (chopped)
- kosher salt
Cooking method:
- Heat oil, garlic and chili pepper in a skillet over medium heat.
- Cook, shaking pan occasionally, until garlic is light golden brown, about 6 minutes.
- Increase heat to high, add razor clams and wine, cover, and cook until razor clams are just cooked, about 5 minutes.
- Add coriander and salt to taste; stir-fry razor clams.
- Transfer razor clams to a serving plate and top with remaining sauce.
