Steamed Mud Crab Claypot Recipe

(Serves 4)

Material:

  • 4 mud crabs
  • 4 eggs
  • 2 tablespoons chilled water
  • 3 tablespoons rapeseed oil (1 tablespoon for frying the garlic; 2 tablespoons for coating the bottom and sides of the pot; 3.1 tablespoons for pouring the onions)
  • 1/4 tablespoon pink rock salt
  • 150 g pork
  • 2 green onions
  • 1 tablespoon garlic

Pork Seasoning:

  • 1 large bowl of boiling water
  • 1 tablespoon pink brine
  • 1/2 tablespoon brown sugar
  • 1 tablespoon cornstarch and 1 tablespoon water
  • pepper
  • 1 tablespoon sesame oil

practice:

  1. First clean the soft crab shell and the inside of the crab, remove the internal organs and the white heart inside the crab cap.
  2. Wash the crabs and steam them for about 5 minutes, retaining the crab water. After the crabs are cool, cut the crabs into pieces and put them into the pot, and apply a little oil on the bottom and sides of the pot.
  3. Fry garlic in hot oil until golden brown, remove and drain. Mix the minced pork, crab water, ginger, garlic and eggs, add salt, sugar, white pepper, Huadiao wine and sesame oil, mix well.
  4. Put the seasoned pork into the clay pot, first put the mud crab legs, then put the crab lid, and steam for about 15 minutes.
  5. After steaming, place the pot directly on an open flame and cook until it becomes dry and smells the aroma of burnt crab.
  6. Sprinkle with oil and garnish with chopped green onion.
