Italian salmon with lemon capers and rosemary
Ingredients:
- 4 salmon fillets
- 1/4 cup extra virgin olive oil
- 1/2 tablespoon salt
- 1/2 tablespoon freshly ground black pepper
- 1 tablespoon chopped fresh rosemary leaves
- 8 lemon slices (about 2 lemons)
- 1/4 cup lemon juice (about 1 lemon)
- 1/2 cup Marsala wine (or white wine)
- 4 tablespoons capers
- 4 pieces of aluminum paper
cooking method:
- Brush the top and bottom of the salmon fillets with olive oil and season with salt, pepper, and rosemary.
- Place each slice of seasoned salmon on a piece of aluminum paper large enough to seal.
- Add 2 lemon slices, 1 tablespoon lemon juice, 2 tablespoons wine and 1 teaspoon capers to each salmon filet. Wrap salmon tightly in aluminum foil wrapper.
- Adjust oven to medium-high heat or on charcoal grill. Place foil wrap on hot grill, cook for 10 minutes, and serve in foil wrap.
