Delicious Italian Salmon with Lemon Capers and Rosemary Recipe

Italian salmon with lemon capers and rosemary

Ingredients:

  • 4 salmon fillets
  • 1/4 cup extra virgin olive oil
  • 1/2 tablespoon salt
  • 1/2 tablespoon freshly ground black pepper
  • 1 tablespoon chopped fresh rosemary leaves
  • 8 lemon slices (about 2 lemons)
  • 1/4 cup lemon juice (about 1 lemon)
  • 1/2 cup Marsala wine (or white wine)
  • 4 tablespoons capers
  • 4 pieces of aluminum paper

cooking method:

  1. Brush the top and bottom of the salmon fillets with olive oil and season with salt, pepper, and rosemary.
  2. Place each slice of seasoned salmon on a piece of aluminum paper large enough to seal.
  3. Add 2 lemon slices, 1 tablespoon lemon juice, 2 tablespoons wine and 1 teaspoon capers to each salmon filet. Wrap salmon tightly in aluminum foil wrapper.
  4. Adjust oven to medium-high heat or on charcoal grill. Place foil wrap on hot grill, cook for 10 minutes, and serve in foil wrap.
