Delicious Chinese Lobster Yi Noodles Recipe

Ingredients:

  • 1 lobster
  • ½ pound fresh Chinese Yi noodles or other thin, fresh egg noodles
  • 3 tablespoons peanut oil
  • 1/2 cup thinly sliced onions
  • ¼ pound mushrooms (thinly sliced)
  • 3 garlic cloves (chopped)
  • ½ cup chopped green onions
  • 1 tablespoon light soy sauce
  • 1 tablespoon oyster sauce
  • 1 tablespoon rice vinegar
  • Salt and freshly ground pepper to taste
  • 1 tablespoon chopped fresh cilantro

cooking method:

  1. Bring water to a boil and steam lobster for 10 minutes.
  2. Set the lobster aside until cool enough, then remove the meat from the shell and cut it into small pieces.
  3. Bring a pot of water to a boil, add the noodles and cook for 3 minutes, stirring to separate. After draining, rinse under cold water and drain again.
  4. Heat the peanut oil in a wok or large skillet. Add onions and sauté until tender. Stir in mushrooms and sauté until wilted. Add the garlic and about a tablespoon of the scallions and briefly saute until fragrant.
  5. Add the lobster meat, then add the noodles to the pan and mix well. Add soy sauce, oyster sauce and vinegar and combine all ingredients. Season with salt and pepper.
  6. Sprinkle with cilantro and transfer to a serving bowl. Sprinkle with remaining green onions and serve.
